Fondos y Bikinisis the new project by influencer Robe Grill and his partners in Guadalajara. A new seafood restaurant you should keep an eye on.
The concept of the place revolves around “fondos,” that is, broths full of flavor and aroma that are simmered for several hours.
Of course, there’s also a cold bar featuring fresh seafood from Sonora: aguachiles, tostadas, and fresh and gratinated conchas.

What will you find at Fondos y Bikinis?

From the bar, you can see a pot always simmering, where the broth concentrates and is then transformed into different dishes with deep, delicious flavors.
To start , we recommend the gratinated red clams, the Sahuaro tostada, and the shrimp aguachile.
Afterward, you can continue with the clams in wine or the seafood birria— comforting dishes that are perfect to pair with a glass of white wine or a cocktail.
Finish off this great meal with a pistachio cookie or the sheep’s milk cheese flan.
